What's the difference between these two? My 2005 Saab 9-5 seems to take the 11s, but '06 and on Saabs take the 202. Is the 202 a newer, better fluid?

202 and 11s are interchangeable and can be mixed with no problems. The 202 is supposed to be better.

Fuchs 4300b and Prestone European PSF are other options.

202 is newer and backwards compatible with 11s. Whether its better is unknown.

The most observable difference is in the low temperature performance where CHF202 is about 1400cP at-40C wheras CHF11S is about 1100cP at the same temperature.

Whitewolf is right that 11S was a bit better at extreme cold temps compared to the new 202. The 202 isn't a "better" fluid, just the most recent version.

I've converted my A6 from 11S to Amsoil PSF and have had no problems. Even last winter when we had weeks of sub-zero temps, the power steering pump never said a word. Plus the Amsoil stuff was much cheaper.
