What type of P/S fluid can be used in a 06 GMC Sierra? I was just hoping to extract fluid using a turkey baster.

I put Mobil 1 ATF in the PS system on my 2004 Silverado, and someone in the service department at my local dealership did me a "favor" and flushed it out, and refilled it with whatever fluid is that GM dealers use.
The PS fluid that they use at the factory is absolute rubbish in the winter.
I politely told them that they better not have any intention to charge me for doing that (and they didn't charge me). Their excuse was that it was "unapproved fluid in a vehicle that was still under warranty", and they honestly thought that they were doing me a favor. They assumed that someone had accidentally done that.
However, it worked just fine up until that point.

I bet maxlife would do nicely, and it's cheap.
I used Valvoline Amber P/S fluid in my 2008 Silverado and it works well.
I used supertech PS fluid in my 04, turkey baster method once a week until the fluid is clean. Steering is nice and quiet, runs perfect with over 180k miles.
GM trucks from that time use the regular clear/yellow conventional PSF. When I am helping a friend, I just get a bottle of the store brand PSF.

Yes, I turkey baster my PS pump every 10K engine oil change. Been doing that for 20-25 years with no pump failures. Also I do the same with the brake master cyl.

For any GMT800, my pick is Valvoline MaxLife Power Steering Fluid; this product replaces their Valvoline SynPower Power Steering Fluid which was actually recommended by GM for these trucks.

Royal Purple Max-EZ PSF in my '06 2500 Duramax & Camaro.
Not a avid Royal Purple user, Full synthetic dedicated PSF is hard to come by, Leaves me with Amsoil & Royal Purple, RP was the cheapest....

Redline also makes synthetic PSF, but I don't know the price.
