After reading and reading I'm more confused than ever. 1969 American Motors AMX. 390, mild cam, Edelbrock Performer carb, Pertronix ignition. Hi zinc, low zinc, no additional additives, etc, etc, etc. What's the best 10W-30 dino oil?

The Mobil above is a fine lubricant. I've been running Castrol Euro 0W40 in our Stinger GT2, my modified Jeeps and my Bronco with a 302.
Castrol has a 0W30 that would also be fine if your specifically looking for a 30 grade.

How old is the cam? If it's factory original got some good hours on it and not going flat, then she must have worn in O.K. so just any decent 10W30.

Rotella Triple multi-vehicle 10W30 used to be the go to. I can't find it around here.

I might shy from certain synthetics on an old engine with old seals. That isn't an old Wive's tale - it is and old Husband tale :)

Enjoy the car. A marque with a Trans-Am winning history

With a mild cam, and mild springs, you could run just about anything and be OK. That said, this is your baby and you want the “best”. You probably change it every year, which isn’t many miles. You don’t have cats or sensors to worry about.

So, an oil like Valvoline VR1 - high in anti-wear, low in detergents - would work well. It would potentially poison cats and sensors, but this isn’t a worry for your car.

I would pick the 10W30, because, sitting in a garage, cold starts aren’t an issue, either.
