Take a phenomenally reliable Honda 350cc air cooled single cylinder motor. Brand new, never fired. New clutch with heavy duty springs. New billet cam, hard welded rockers, and heavy duty valve springs.

The motor was intended for offroad use, and originally came with a simple oil cooler.

It is now going into an onroad application, and it now has a proper finned oil cooler.

I am unaware of the original maintenance schedule for the motor.

Ignoring the initial break in period (it has to be done a certain way in this situation) what sort of interval would you use?

Usage will be 6000ish rpm cruising with minimal in town usage.

Probably going to run conventional. 10w40 in the cooler months, 20w50 in the warmer months if the temps on the motor are high.

Sump with new oil cooler is 2.5 quarts.

Not sure on oil, used to run motul 10w60 or 15w50.

I have 30 gallons of rotella on hand...but I can get gn4 for under 18$ a gallon.

Using oem honda filter.

I would say run a conservative OCI of about 2k miles. That is what I ran on my 250 that held a little under 2 quarts. Probably a good idea to do a UOA to see how much life is left in the oil and then you can bump it up.
