M1 5w30 EP HM thicker than M1 0w40 (below 40c)?

Hello.
I decide to stop using M1 0w40 FS for my Maxima 09 with the VQ35DE engine. It still burns about the same amount of oil with the 0w40 compared to the 5w30. And was worried too about the cats since it's a full SAPS oil. I changed the oil last weekend to M1 5w30 EP HM (11.8 cSt@100c).
So i was browsing the wildman calculator and wanted to compare M1 0w40 to the M1 EP HM. And all numbers above 0c (32F) are higher in the 5w30 oil!
How's that true being a 30w oil compared to 0w40?

That's the difference in VI.
