Which would you choose?
I talk on my phone
I text
I message though an encrypted E2E program that is compellable with both.
That is all I use my phone for.

I would choose none of the above. I have a Pinephone running Mobian (Mobile Debian) Linux that has worked fine for me since my cell provider stopped supporting my old flip phone. It's an inexpensive, low-spec device whose software is still under development. The Pinephone has a lot of limitations but works fine for making and receiving calls which is all I really use it for.

There is also a fourth gen Sailfish os phone out now. Might be my next phone. Looks real polished.

I'd have to say the Librem 5 since I'm responding to this post on a Librem 5.

It is quite an amazing device being developed from scratch with privacy as its primary feature. It's certainly not for most people however. Especially the budget minded.

Heavy wood for privacy and security
