Latest Road and Track magazine mentions that Nissan now recommends using their $12 per quart Ester based oil to quiet the engine in the 370Z. In laymans terms, what makes an Ester based oil quiet an engine down? And what popular (under $6 per quart) synthetic oils on the market are Esther based? And whose oil is Nissan selling for $12 per quart?

Good question. Only ester oil I know of is Redline.
 
M1 0w40 most likely has an ester component to it that will suffice, for atou 6-7$. That is your cheapest option. The Nissan oil is Group II (dino) and Group V (ester), about 20% ester from what I remember hearing.
