which car would you choose for the journey? Imagine it's Summertime, somebody else is picking up the tab on gas, food, hotel, etc. you just have to drive...

I have never driven one, but I am quite sure a new Corvette would be a blast on the interstates...
 
Well I would go with a McLaren F1 or Carrera GT if money is no object. More realistically a M5/M6 or 911 Turbo would be nice also

Depends entirely upon what you want.
I have done any number of long trips in things like our old Vanagon, Benz diesels, our Aerostar, and various Hondas, and never gotten a ticket. The VW and the W123 diesels were too slow to attract police attention, and the Aero and the Hondas are too anonymous.
A 'Vette, a Porsche, or (lord help you) an F1 are the last machines you would want to drive, unless you enjoy being cop bait wherever you drive.
Let me hijack your thread, and propose a different fantasy:
I wake up one morning, shower, shave, dress, and walk out to the driveway. Some kind soul has sportingly left a Ferrari 330 P3, a Porsche 917K, a Lola T70, or a Ferrari 512S in the drive for my commute. This is nice, since I know where the po-po hang out, and I also know the rural roads on which to lose them.
I fire up whatever beast the kind soul has left for me, killing it three or four times in the driveway, while learning the clutch. I then drive the half mile through the subdivision to a four lane divided highway, and drive slowly to a small city, giving everything a chance to warm up. I navigate the two miles through the small city, with plenty of traffic lights allowing both additional warm up, and my gaining familiarity with shifter and clutch.
We then launch into 18 miles of rural two-lane bliss. We go down to second for every clot of traffic we come upon, and we blow by in a great rush of sound. I know where the cops hang, and I know that I can easily evade them.
Bliss!
 
An F-150. Roomy, comfortable, powerful enough, and more visible than a car.

I'd be okay driving my Ranger though. I just did 500 miles in it today.
 
But to answer the O.P, I'd like to drive a Mazda RX-7 (FD body-style) outfitted with the Spirit R trim. Of course I wouldn't stick to the highways, who would with one of the best handling cars out there?!

A car? How about a "large car", specifically a fully loaded Kenworth with 600HP, 13-speed and 3.70 gears dragging a spread axle flatbed with an easily secured two-foot high load and the whole thing grossing under 50,000.

I'll never understand the appeal of sports cars after driving a big truck. The former is no challenge compared to the latter (especially as the latter usually grosses half-again as much with far less power and comfort).

Okay. A nicely updated 1966 IMPERIAL. Cadillacs were dogs and Lincolns were boats.
 
1982 DODGE Colt (1.6 ltr. Mitsu) w/ the twin stick , which was a 4 speed manual and another lever on the floor used to lower the gear ratio ( ECONOMY and POWER mode ) . Had lots of fun with that car . Those were the days .

Second to that would be '86 Chevy NOVA hatchback (w/Corolla 1.6 ltr. engine ) coupled w/ the 3 speed auto , very comfortable seats , had lumbar and seat height adjustment . Last , '88 FORD Festiva ( 1.3 ltr.) w/ 4 speed manual . LET THE GOOD TIMES ROLL on those 12" tires .

Get em' smokes! On my recent trip to Ft. Collins I set the cruise at 62mph(100km/h) on my 02 Prizm going down I-80. I am an active and safe driver I sped up to 70mph when the need arose to help keep the highway safe. You know one must not become an obstacle when faster traffic approches from the rear, I would accelerate to allow big rigs breathing room until they could get in the fast lane, and then I would slow down to 62 allowing them to pass safely. My car has the three-speed auto and 62 just felt alot better than higher speeds, less buzzy. The reason I started this post is because I was passed by an antique air-cooled VW bug on I-25 approching Cheyenne. I was going 65 when this happened, a lady minding her business blew by me at what was at least 75 in her convertible "people's car"! I then started debating what car to buy that would excel at interstate travel, when a black vette passed me and pavlov's bell started ringing. No, alas I cannot afford a Vette, maybe one day, but I wondered what car Bitogers would drive if price or fuel mileage where not a concern. I was averaging 40mpg on this trip and I figured I would still be happy with a 30mpg average if the car could run with traffic safely on the intersate. Still don't know what car that is but I think the new V-6 Altima might be a good choice or a V-6 Malibu...
