If T6 5W-40 when specified is out of stock, what options are there?

The manufacturer can not deny warranty for using the wrong "brand" oil unless they provide it to you for free.. a good oil that meet the guidelines will work..

I have 2017 EcoDiesel. I'm having trouble locating enough T6 for an oil change. Is there an acceptable option? I have seen Valvoline premium blue full synthetic oil.

A great choice. Napa brand has 5w40
