I just replaced thermostat and I think I'm having issues

don't know I just drove it a half hour and it stayed at 206° F the entire time but when I stopped it slowly crept up to 226 fans kick the one and brought it back down to 208 and then it slowly starts to creep back up to 226 then the fans kick back on and lose back to 208
 
So it's normal for it to get that high and fluctuate back and forth because that was the whole reason I switched out the original one

Little extreme for 77°F ambient as these radiators are fairly large.

My 2000 Silverado 1500 has a 2013 2500HD 6.0L/6L90E swap with the same radiator & electric fans you have, It doesn't run over 210°F in mild temps.
Over 85°F ambient....I run the A/C which kicks the fans on.

This is a job for a Thermal Imager.....Check for cold spots in the radiator core caused by blockage.

See if Aisin makes a thermostat for your car. I only buy theirs or OEM now. Not worth the headache of doing it again or replacing a head gasket.

temperatures are 100% normal. my truck sits around 205 all the time even with 2011 escalade K5L fans (700w x2 fan motors). GM thermostat, GM radiator hoses, GM water pump and GM radiator all new in 2020. your cooling system will run over 250° before starting to boil.

This will happen if the AC isn't running and therefore the cooling fans aren't running. Without constant airflow through the rad, the system heats up until fans are tripped, system cools back down until fans turn off, rinse/repeat.
 
No duralast

Normal....But I'm wary of aftermarket Thermostats, They're not all that expensive from the dealer.
