HPL 40w choice for street/track F10 M5?

I have a 2013 M5 with the S63TU engine (a "hot v" TT V8), a stage 1 tune, and high-flow cats. It does 6-7500 mi/yr and 4-8 track days per year. I'd like to go with an HPL 40 weight, but I'm unclear whether I should choose the euro, regular PCMO, or the new NO VII. the price isn't a particular concern between these, so long as it's worth it.

I live in Michigan, but the car is garage kept and not driven in winter. Any recommendations between these three?

Which of the above engine oil? The one with the highest flash point.

The Euro 5W40 will be fine. I'm running this on my Sportwagen for track.
