How to make a run and drive video with a manual

Need to make one for a car I'm listing on Cars and Bids. If it was an automatic, no problem. But with a manual, how do you shift, steer, and hold the camera all at the same time. I tried using a tripod strapped to the passenger seat, but the video turned out so shaky, you would think there was a problem with the car. I guess left hand holding the camera, left arm steadying the wheel while shifting as fast as possible?
 
When you strapped the tripod into the seat, did you just pull the seatbelt or did you force the seatbelt to lock?

I use this type setup while riding my motorcycles.

Might get some strange view while driving a car with this set up and I guess it could also be illegal in some jurisdictions to wear a helmet while driving a car.
