Just wanted to share my ned recipe for fried tacos. Plain corn tortilla are ok heated/steamed or whatever in an Enchilda, but fried is the way to go. I was pan-frying them for a while, flipping them over to do the 2nd side. Now, my new style is to fry only the one side. It's awesome. One side gets fried crisp and the other stays soft and moist. This way it's easier to fold into the final taco shape...yum. You can fry the cheeze with it. Queso Fresco is good, I use a lot of Mex mozerella too. Cheddar just does not cut it anymore. Enjoy.
