I love seafood, especially shellfish, but I'm really fond of most any fish of the saltwater variety. Grouper, sole, flounder, halibut, salmon, cod, etc., etc.
We eat seafood mostly when we go out to a restaurant and only cook it at home occasionally. I'd like to cook it at home more often and would love to hear of some good recipes for fish. Grilled, pan fried, baked, broiled...whatever.
I think it really comes down to seasonings, marinades, etc.
Does anyone have a favorite way of preparing fish that they're willing to share?
 
Okay.

Cooked Alaskan pollock last week. Saw the two bucks per pound on fillets and decided to do sumpthin' other than the red meat thing.

Thaw fish. Heat electric skillet thing. Rinse fish. Spray Pam on skillet. Throw fish fillets on skillet. Sprinkle salt and oregano on fish. Cook arond 3 minutes at 300 degrees farenheit. Flop fish over onto uncooked side. Coor 3 minutes. Sprinkle salt and oregano on fillet. Remove, place on plate. Take 6 steps across shanty and place plate in front of monitor. Eat fish.

Burp.

Teflon cooking surface and Pam barrier allows easy clean-up.

Realize 30 minutes later I'm still hungry.

Clean electric skillet and cook two burgers. Eat.

Life is simple in the shanty.

Here is a quick fish sandwich recipe similar to obbop's:

Clean and dry fish fillets, cut into sandwich size pieces
Melt butter in shallow plate in microwave
Salt and pepper fillets on one side and lay face down in the butter
Salt and pepper the other side
Cook 3-5 minutes at 50% power till half done
Flip and dust with Paprika
Cook 3-5 minutes until just all white inside

Eat on toasted bun with lettuce and slice of tomato and tartar sauce

Tartar sauce:
Real mayonnaise
Sweet pickle relish
Salt and pepper
Dash of Tabasco sauce

It is a quick and delicious lunch if you already have the fish thawed out.

I think (maybe not sure), that Pablo could be referring to the Garden of Eden Joke where Adam and Eve go swimming, which was expressly forbidden.

Thundering voice comes down from the heavens "Now I'll never get the smell out of the fish".


Of course he could also be referring to natto(?) the slimy fermented beans.
 
Thanks for the replies. I agree that simple is usually better with fish, but I was hoping for some slightly more interesting recipes. Like blackened fish. Or maybe a really good marinade to use when grilling or broiling.
 
Grilling is easy with most of the ocean running species.

Try marinating in a watered down lemon-lime juice with dill seed and salt for less than a day. Then dry fillets.

Lightly dust with garlic salt and pepper
Paint with peanut oil and put on the grill, 3/4 cook
Flip and lightly dust with paprika and parsley
Don't overcook!!!

It is hard to make it taste poor unless it is not fresh.

For a white sauce use:
Cream
White wine
Garlic salt
White pepper
Basil
Cumin
Cilantro
Parley
Lime squeezin's
heat and stir alot

It all tastes good. I eat about a cubic yard of fish a year cooked all different ways.
 
I use this recipe with Grouper fish or white meat.

Place 3 inch strips of green onions and sliced ginger on the bottom of fish. Stuff fish with zucchini, green peppers and a 2 inch sliced ginger. Also couple of ginger slices on top of fish. Steam fish.

1/2 cup each of chopped green onions and parsley. Place on top of fish. Boil 2-4 oz peanut oil..until it's ready to flame(heat it hot) and add 1 tsp sesame oil. Pour it over fish and season with soy sauce.

If you can't steam it, wrap it tight in foil and bake it. Don't overcook or fish will become dry..fish needs to be moist.

If you want a more salt flavor on fish add 3 Tbl sea salt(kosher will do but not table salt) in 8 oz water. Stir for a minute and let fish soak for 5 minutes each side. Omit soy sauce in recipe. The key is to bring out the flavor of the fish. I use green onions, sea salt, ginger, pepper and peanut oil to enhance the flavor.
 
Stick fish fingers in the microwave for 30 seconds per fish finger. Serve with Heinz ketchup. Makes a quick and delicious meal.
