My wife often puts these breads in the fridge and it makes a big improvement in their shelf life, but I don't like the 'texture' (??) when it's kept in there.It's interesting you write that, because I find naturally fermented (sometimes CALLED "sourdough" but not sour) lasts nicely in the fridge and never actually gets moldy.
Does need warming/toasting or at least return to RTI'll have to look, but I'm not doubting you.

No worries, Pablo. I knew it was more about bakery sourdough, and we're on the hunt for something healthy ourselves, and it's hard to come by. That's just one we looked at the didn't have ingredients that were on our own no-no list.No not meant that way. Not personal. Just not really comparable. I could almost call that a cake. But yes, packaged from a store is not what I wanted to compare

Low gluten, more hydration and needs more working.We recently bought someJovial Organic Einkorn Unbleached All Purpose Flour - Bread Baking Flour . Supposed to be acient grains never modified. Still trying to get the texture right. Maybe it need a lot more yeast than modern flour. it's a work in progress.
