We have a 2001 Clark S120XSL that says to use "Clark Approved ATF only". Anybody know off hand if there are any more commonly available fluids that meet whatever the spec is?

Probably an ISO 32 hydraulic fluid for the hydraulics and a Dex/Merc for the transmission. I would use Maxlife ATF in the transmission, or Mobil D/M if you want a good mineral fluid.

Indeed, sometimes educated guesses have to be made. I made no assertion that it came from the service manual.
