All the air is for freshness . I saw that on how things are made . Also 1 small potato for 12- 22oz bags .
 
That's a Sprinter, when they go over like that, the engine hydro locks and dies. About $25,000 for a new 3.0L Turbo diesel.....
Had one that did that in my fleet.
Implemented safe wind speed driving guidelines, max was 50 MPH. Above that, park the trucks, not safe to drive.
 
I guess yet another reason to make those truck electric? Heavy battery will reduce the center of gravity enough to make it less likely to be blown over? Not like you need a heavy load for chips anyways.
 
It's actually mostly nitrogen gas in the bag (90%+), not the normal ~78% N2 you have in air. Keep oxygen away and food stays fresh for a long time.
