Changing Oil - Can I Just Use Ramps?

No, it doesn't HAVE to be hot, but it's better for changing the oil. It'll flow faster and it gives the contaminants less chance to settle before draining.

In your case, I'd recommend doing it cold so you don't burn yourself.
 
Ramps are fine, I've never used jackstands with them, I just put on the e-brake. Ramps might make it easier, but on my 4x4 trucks I don't need them. Just the creeper is fine. Again, be sure the ramps are rated for the weight of your truck.
