I would run M1 7500 for 5000 mile intervals at the recommended weight. Good oil for a decent price. Yes it's a blend but from what I have read here it's group III with some group IV.

Royal Purple gets my vote. I find it expensive but I'd run it if I had a GT or performance oriented vehicle that saw the upper reaches of the tach regularly.

I once too was worried about moisture myself but as Jimbo pointed out, oil doesn't like/absorb water. Anyway, even if some H20 got in there, it's going to be burned off/evaporated the first long run of your vehicle.
