Waterproof Grease --Aluminum or Calcium Complex

Calcium sulfonate complex for water resistance. Check the water washout #'s for a good calcium soap grease vs anything else. And FWIW some of the best chassis greases at very good prices are marketed by CAT and fortified with 5% MoS2. Their severe service greases are all Ca soap bases.

Installed new Detroit Truetrac rear end.

FWIW with any torque biasing diff, avoid any diff oil that has LSD FM's in it, you reduce the biasing of the diff. Jtekt, the manufacturer of various Torsen models reckons you lose around 10% biasing when using LSD FM's. The parallel helical gears rely on being forced into the pockets to create...

Do you run a bypass filter system? Why?

The engine came fitted from the factory with it. Mann-Hummel rotor (centrifugal) filter.

    Torsen gear oil

I ran Motul Gear 300 (non LS) in an Ashcroft ATB (Ascroft Transmissions torque biasing centre, their version of a Torsen T2 or Quaife ATB) in a centre diff as it's an MTF/transaxle fluid. It worked very well.

Best, 5% Moly Heavy Equipment grease

CAT's greases are calcium sulfonate complex so have better water/rust resistance compared to Lithium and aluminium, with 5% moly and you can get them in NLGI #1, 1.5 and 2, synthetic or mineral oil. [edit] oops, just realised it's an old thread.....

IVECO Daily - ultimate (semi) affordable 4x4 ?

A couple of blokes that had Defenders on the Oz Land Rover forum have upgraded to Iveco's for outback touring and mostly love them, although apparently they are chronically underbraked. An upgrade kit was developed here to mitigate that issue.

    Differential Oil (GL4)

Just my $0.02 worth. Land Rover diffs are spiral bevel, not hypoid (excepting the 8HA Salisbury, which is metric version of the Dana 60 with Land Rover cheddar cheese axles, but I digress...) so technically only need a GL4. They are specified as requiring a GL5. For diffs I wouldn't use a GL4...

    Land Rover 300TDi Oil

No, that's the TD5 5 cylinder engine which came after after and used unit injectors. O rings can leak on those, early ones ('99-'01) could also have the fuel rail crack in the head and leak fuel too. Later EU3 engines mostly fixed this, and you can get an aftermarket Spanish made head that has...

    Land Rover 300TDi Oil

Mate, as said above a CI-4/CI-4+ oil, or an oil that meets several of the following, ACEA E4/E6/E7/E9 These are HD diesel oil specs, not petrol biased, dual rated oils. Ran one for fifteen years in a Defender, keep the rocker clearances in spec, in normal circumstances best every 10,000km...
