My 5.3 Direct Injection uses no oil between oil changes which is 5K miles. Oil still looks good [medium amber look] at 5K miles. I have 138K miles on it. Still gets 23+MPG on 87 octane if it is all highway miles. I use either 0w20 Mobil 1 EP or 0w20 AC Delco oil.
Only owned V8's my whole life also. My first vehicle was a used fully loaded 67 Impala with the 283 V8.
I will have to wet nurse my 5.3 V8 2016 Tahoe [bought brand new in 2016] as I will be keeping it for very long time.
In my neck of the woods I see a lot new 2021- 2023 Tahoe,Suburban,Yukon...

Thought about getting a MKS 3.5 EcoBosst back 2015. The interior felt to small for me as you mentioned so decided to get the Tahoe. I prefer a V8 to a 3.5 EcoBost anyway.
If I was looking for a sedan that is exactly what I would buy. Much nicer then the Accord and all the other vehicles out there. Had a rental Charger exactly like that last year and loved it.
All Tire Kingdom does is rip people off in South Florida. Happened to most of my naive neighbors. Jiffy Lube will make a ton of of money when all the snowbirds come down for a oil change. The average oil change will probably cost them 600-1200 bucks or more after they upsell them unnecessary...
Put 300K miles on a 2005 4.6 Crown Victoria. Only major repairs were the Water Pump and AC Accumulator at around 170K miles. Ran 5w20 Mobil 1 AFE and sometimes Motorcraft. Was the best vehicle mechanically I ever owned.
My GMC dealer in Pompano Beach only uses AC Delco oil. They do not have Mobil oil. My Chevrolet dealer in Paramus New Jersey does have Mobil oil besides AC Delco. I get Mobil 1 0w20 when I am at that dealer.
