That is some what normal for some greases to seperate. Grease is oil and some kind of thickener. All yuo can do is to pull the thingie that puts pressure on the grease and lock it back during storage. I hate when the seperation happens.

Guns don't care what kind of oil you use. I use what ever is left over from oil changes. Lately I have been using left over Delo ESI 80w-90. Summer is warm.
Look at an SAE viscosity and see what cold starting temps 10w-XX is good for . Anywhere in Calif. 10w-30 would be fine . The 5w would be better in below freezing starts. That being said 5w-30 syn would cover all bases and it would work as good as needed.

There isn't much difference in the UOA with or without a bypass filter except maybe the total solids . but it you can get paticle count or pqi [not exactly sure on the name the uoa company can help] will show the improvement.
Sounded like a race engine,, how was the wear? I agree with the use of an HDEO oil ,you can't get a better oil and the price is right so you will change the oil often without worrying of the cost. IMO getting the lead out of the fuel was the best thing for engine life that was ever done.
