Maintenance wise the F100 uses a module based system where the back shop swaps out entire modules and sends the module out to rebuild facilities. The F110 doesn’t have modules and the back shop digs deeper into the engine for repairs. Sort of like swapping an entire transmission vs rebuilding...

International F-15s (Israel, Saudi Arabia…) have had their choice of F110 or F100 for decades, the US only has F100 in their legacy F-15 fleet. The F-15EX is F110 powered.
You are correct. F100-100 and -200 had some issues but later models (-220 & -229) were good. I was a F110 ( and F101) mechanic in a shop that had both F110 and F100 (amongst many others) so my knowledge is their mechanical / maintenance differences. I know very little about their flight...
Voortman is more common in the steel construction field, less sheetmetal , more heavy plate. They make a gantry mill with plasma cutter machine that is pretty sweet.
We got a new tube processor at that uses plasma to CNC cut tubing. On some of our larger weldments it saves hours of saw cutting and drilling and makes higher precision parts.
