I was warned that Sentury Touring isn't designed for highway on a hot pavement via I-40 or I-10 during the summer - budget tires. So... I was told that Falken ZE060 has a better summer compound and better heat stability on hot pavement.

I might go with all-season since I’ll be driving on either I-80 or I-40. Falken has better summer compound and does pretty well in light snow due to its proprietary 3D Canyon groves and sipes design. Again, Defender 2 is a big winner on tread longevity and MPG.
Correct. DOT up to 2022 has severe issues with Sentury Touring 1.0. 2.0 addressed most of the issues and added silica compound. Make sure DOT is 2025+.
