I don't know what 21 year old BMW you drive, but I LOVE old BMW's. E30 M3 is my dream car. My whole argument is that the sludge is brought about by 15K mile oil changes with the wrong oil. My corrado has done track days with those temps, water and oil, and has been problem free once I stay on...
I have no info on a Honda. Never owned one in my life. E46 run 188-207°F normal everyday driving. You don't think BMW cooling systems run hotter then normal, fine. At ~65K miles you'll be one of the people complaining about BMW's reliability.

People buy these cars without realizing the cost of maintaining them. People do the 15,000 mile oil change at a local lube shop with dino. I've seen it. I have an 01 330ci, had it for 10 years. It's been a great car so far and I do all the repairs myself.
The water pump runs for ~10 minutes once the ignition has been turned on. Temperature is not a factor in operation of the secondary water pump. If you turned on the ignition and the pump started running and stayed running, this is perfectly normal.
I don't think a few track days will be a problem. I've made loads of passes on the drag strip and a few autocrosses with Rotella. Car has over 110,000 miles and is still running strong. Original engine and timing chains.
I use Redline MT90 in my corrado VR6 had have been using it for many years without a problem. The car gets used in the summer and see's the drag strip. Most guys I know run Redline MTL in their VR6's without a problem and with smooth shifting regardless of the weather.
The cooling system is a breeze to change out with a M/T. On stands remove the fan for room to work. Remove the hoses, belts, waterpump & thermostat and the coolant bottle. Took me about 3 hrs the first time. At 90K miles all the parts looked good, problem was the thermostat was sticking open.
